Ingredients
1 Boneless Skinless Chicken Breast cut into 5 pieces
½ Tomato Chopped
1 Kiwi Chopped
1 Tbsp. Coconut Oil
1 Cup Cooked Basmati Rice
½ tsp. Lemon Juice
Juice of one Lime
2 Tbsp. Avocado or Olive Oil
1 oz. chopped dill
1 Tsp. Chopped Dill
1 Tbsp. Apple Cider Vinegar
Directions
Marinate the pieces of chicken in dill and the lime juice
overnight
Cook the rice and let cool
Brown the chicken in a non-stick pan
To a mixing bowl add all the ingredients but the chicken and
mix. You should let this sit for about 20 minutes just to let the flavours
absorb. Plate and top with your chicken
pieces.
